Day 13 – Food Prep!

As of this morning, I’m down 12 lbs so far. But, I usually spend Saturday mornings in bed, being super lazy and sloth-like. It’s the only day of the week I have time to do that, and it is glorious; no demands, no appointments, no obligations. Just me and my bed. Hubby always gets up early, which makes me grumble at him every Saturday morning around 7am.

Breakfast at 2pm? Sure! Why not? I can’t even begin to tell you how much we love the Pederson’s Whole30-approved bacon. We are trying to limit ourselves, because it is quite salty, but damn is it good! Bacon bliss.

Saturdays and Sundays are food prep days. We decided to avoid Whole Foods this weekend and shop instead at Fresh Thyme. We came out of Fresh Thyme paying 2/3 what we would normally pay at Whole Foods! Not to mention, in our locale, Fresh Thyme has a better selection! Bye bye, Whole Paycheck! I’ll still use your bags, though. They’re pretty convenient.

Don’t Skip Meals!

Hubby and I got busy during the day and missed “lunch,” (a meal between breakfast and dinner, which today would have occurred around 5pm) so we were beyond hungry while prepping food. This presents a challenge for portion control. We ended up grabbing a few Rx bars in lieu of lunch, but that’s not a habit I want to get into; using bars as meal replacements. They’re never as satisfying as you want them to be and they’re fairly Calorie-dense!

Something’s Fishy

Tonight, I tried my hand at cooking ahi tuna steaks and yellowtail. I really wanted to try both to see if it was worth purchasing again. By the way – Holy crap! Sashimi grade fish is expensive AF!

Anyhow, I found a recipe, made it my own, fired up one steak of each and split it with hubby. We wound up eating about 8 oz of fish each – too much; 4oz would have been PLENTY. Our eyes may have been more ravenous than our bodies, because it didn’t look excessive on our plates, but we could barely finish it. We should probably use the smaller plates.

Upon logging our Calories into MyFitnessPal, we discovered dinner was 800+ Calories! No wonder we were ready to burst! Nonetheless, the ahi turned out awesome! Soooo delicious and so simple! We will be having that again for sure! The yellowtail was good, but we both liked the ahi better.

Just in case you want to replicate tonight’s masterpiece:

Ahi Recipe – Serves 2

  • 1 Ahi Tuna Steak, divided
  • 2 TBSP Ghee
  • 2 TBSP Olive Oil
  • 1 TSP Cayenne Pepper
  • 1/2 TSP Sea Salt
  • 2 TBSP Peppercorns

Cooking Instructions

  1. Season fish with salt and cayenne pepper
  2. Heat ghee, olive oil, and peppercorns in a skillet until peppercorns pop
  3. Gently add fish:
  • 1 min per side for rare
  • 1.5 min per side for medium-rare
  • 2 min per side for medium
  • 2.5 & 2 min per side for medium well
  • 3 min per side for obliterated – you know what? Don’t even bother buying this beautiful and very expensive fish if you don’t like any pink in the middle

Squeeze lemon juice on top to taste. Hubby made cauliflower mash and blasted broccoli as our veggies for the night. It was all very good, and filling.

Healthy Eats Side Effect

I love broccoli. Why doesn’t it love me? Why do I always have incessant broccoli burps for hours after eating broccoli? So gross. It’s like a nasty mouth fart. Not awesome.

More Meal Prep Creativity

Meal prepping continued with a “What do we need to cook up?” concoction that I’ll just call Cabbage Chicken Soup. Hubby also took a few of the chicken breasts and made more chicken and Whole30 gravy; it’s the closest thing to comfort food that we have been able to make while on Whole30.

I’m really not sure how the soup is going to taste, but we certainly have plenty of veggies in that Instant Pot! The veggies in the fridge were all starting to turn at once, sooooo…. soup!

All of Instant Pot’s 10 quarts’ capacity was required in the making of this mystery soup; celery, carrots, onions, tomatoes, cabbage, garlic, green beans, and chicken. The aroma is divine. I’m just not sure about having added the chicken. Regardless, I’m sure hubby will eat it. He eats everything I make. He just told me, “98% of the time, it’s really good!” I’m pretty sure the other two percent consists of a rice mishap and a waffle fiasco, each circa 2015.

Instant Pot Love

I know I’ve said it before, but I LOOOOOVE my Instant Pot! Nom Nom Paleo (where I discovered Instant Pot) has awesome recipes, and I only need to modify some (like the meatballs) slightly for Whole30.

Today’s Grub

I came in a little light on Calories at 1474, due to missing lunch and trying to make up for it with an Rx Bar. However, I’m full as hell right now from dinner. No need for even more Calories:

  • B: Eggs w/added egg whites, bacon, kale-spinach-green apple smoothie
  • L: Rx Bar
  • D: Ahi Tuna Steak, Yellowtail, Broccoli, Cauliflower Mash (way too much food, in retrospect)
  • S: None today

These broccoli burps are revolting. WTF. Hubby may want to sleep in the other room tonight. Blech.

Day 12 – Mental Acuity!

One of the Whole30 non-scale victories is feeling sharper and thinking more clearly. I finally noticed this was occurring today! My memory is much better as well!

I was having a conversation today, with someone who normally intimidates me, and I was surprising myself with the insightful contributions leaving my mouth! This is exciting! I also slept for a full 8.5 hours last night, which had to have helped.

The “bacon on the plate” (since I can’t have “icing on the cake”), was that I didn’t feel tired at all by the end of the day, like I have in the past. I used to be so exhausted when I got home, that I would practically cry at the thought of having to ascend the 15 or so stairs to get to the bedroom! This is a fantastic non-scale victory!

If Only…

It’s a shame that greater patience and higher tolerance for aggravating people are not Whole30 non-scale victories as well. I could’ve used some of that today… well… every day.

I mean, WHO – after receiving a message that someone is too busy to attend a meeting and they’re heads-down to complete a deliverable, expressing they’re compressed for time due to time zone differences on completing said deliverable AND displaying a status of DND

-WHOOO goes to that busy person’s desk right after they receive the meeting “decline” and message, ignores the DND sign, and interrupts their work to ask if they “have two minutes” (if I did, my sign wouldn’t be up and I wouldn’t have panic on my face)… AND when the busy person politely requests the entitled person come back later, THE JERK STARTS YAMMERING ANYWAY! About shit that doesn’t matter!! WHO DOES THAT?!?!? I’ll tell you who! A narcissistic, egomaniacal, snake of an ass hat. THAT’S WHO! Ugh!

Cheers (with water) to the Freakin’ Weekend

I actually left work today while the sun was still up. Well, technically, it was setting, but there was definitely still light outside! I rushed home to enjoy some peace and quiet in our hearth room before hubby came home and peppered me with questions about dinner. This is my version of decompressing without wine; an easy-read (yet informational) book, tall glass/cup of cold water, a fire burning, and a view of the sunset. Life is a-ok. This is Friday night for old, tired people.

The weekend is finally here, and I plan to stay home and relax! Hubby and I may do a little shopping and food prepping, but my ass needs a staycation.

Comida de Hoy

Only 1211 Calories today, in the following forms:

  • B: Eggs and BACON!!!! Bacon bacon bacon bacon. I love BACON! Pederson’s was really tasty!
  • L: Chicken and Hubby’s Whole30 Gravy
  • D: Argument with hubby over finances
  • S: Rx Bar, Mixed Nuts

I felt really good today! Sharper mind, less tired, and two fewer pounds on the scale! Plus, it’s Friday! Yay! At least, it seemed like a “yay” day until dinner time.

Day 11 – Bacon!!!

Bacon makes everything taste better. I miss bacon. Since beginning Whole30, I haven’t had any bacon! The absence of bacon in my and hubby’s lives has been a deep and bleak void.

Every brand of bacon in the Whole Foods near my home has sugar as a top ingredient! I had no idea until Whole30 that bacon (peppered, dry rub, you name it…) has sugar in it!

Today, our lives were changed forever.

I found a store called Fresh Thyme Farmer’s Market that was a convenient stop on my way home from work. I specifically went in for pork loin, coconut aminos (a Whole30 soy sauce substitute) and some Rx bars, but lucky for me, I had to pass the packaged meat section to get to the pork loin.

On a whim, and with a heavy heart as I anticipated imminent defeat, I began reading labels… disappointment after disappointment – Sugar. Sugar. Sugar…until I stumbled upon a package with an unmistakable brand in the corner and a halo glowing overhead. Pederson’s Bacon!!! With a tear in my eye and my heart a flutter, I pranced to the checkout, eager to bring home this fabulous find to the hubby.

The Big Reveal

Hubby greeted me in the kitchen and began unpacking my groceries. When he saw the bacon, he was beaming ear to ear and I thought I saw a tear glisten in his eye. He looked up at me, wrapped me in a bear hug and started jumping up and down in sync with me like we had just won the lotto, all the while squealing, “Bacon! Bacon! Bacon!”

*wipes tear* It was beautiful.

Pork Loin – Bacon’s First Cousin

We decided on Pork Loin and Brussels Sprouts for dinner; I really wanted to use bacon, but hubby is guarding it like a precious commodity and will only allow it for breakfast. The Sprouts weren’t nearly as good without bacon.

I made it through the day, despite a 3am wake up to finish the presentation slides for my boss. They’re still not done to his satisfaction, so I’ll likely be working all weekend. Four times per year (once per quarter) – I just keep telling myself – that’s the only time I have to do this… breathe…

Stress was high today, and I was definitely tired, but food was pretty easy. The cravings were held at bay, likely because I was so busy, and hunger was minimal… or maybe I was just too tired to give a shit.

Yesterday’s Foot Joint Pain

The foot/toe is feeling much better. I decided not to have any beef today because of the sore joint thing. I also wore different shoes. The pain subsided substantially, so I may lay off beef for awhile. I’m unsure of the cause, since I also changed up my shoes, but I may wait until after Day 30 to reintroduce beef. Good thing Nick’s Sticks come in Turkey Jalapeño!

The Grub

At 1838 Calories, I was slightly over my target, yet again. The Calorie culprits included:

  • B: Egg Whites w/ Spinach, Turkey Sausage, Kale-Spinach-Green Apple smoothie
  • L: Crab, Shrimp, Scallops Sashimi, Coconut Aminos
  • D: Pork Loin, Brussels Sprouts, and a Bacon happy dance
  • S: Dried Mangoes, Nick’s Turkey Sticks, Wild Zora Lamb and Veggie bar (yum!)

Still working on regaining my energy. Sleep deprivation is absolutely playing a role. Early to bed for me tonight.
